Thank you for experiencing some delicious snacks with me! Here are the recipes that I demonstrated. I hope that you begin incorporating them into your weekly meals.

TRAIL MIX

  • 6 cups popcorn
  • 1 cup walnuts
  • 1 cup dried cranberries
  • 1 box, chex cereal
  • 2 cups chocolate chips

Combine popcorn, walnuts, cranberries and cereal in a large bowl. Mix together. Bring about an inch of water to a simmer in your saucepan. Set a heatproof bowl in the mouth of the pot, making sure the water doesn't touch the bottom of the bowl. Place chocolate in the bowl. Stir chocolate occasionally as it softens. When you have just a few small unmelted chunks, remove bowl from heat (residual heat will melt the rest).

 

ENERGY BALLS

  • 1 cup oats
  • 2/3 cup coconut
  • ½ cup peanut butter
  • ½ cup flaxseed
  • 1/3 cup honey
  • 1 tsp vanilla
  • ½ cup cocoa powder
  • 2-4 Tbsp Water or almond milk for moisture

Combine oats, coconut, flaxseed and cocoa powder together in a large bowl. Add the honey, peanut butter and vanilla. Stir to combine. Add almond milk little by little until the dough is easy to work with. Roll dough into small balls. Store in an airtight container

 

CHIA PUDDING

  • 2 cups almond milk
  • ½ cup chia seeds
  • ½ tsp vanilla
  • ¼ cup agave

Combine ingredients and mix well. Allow to sit for 45 minute or overnight. Enjoy!

TRIO OF DIPS

Basic Hummus:

  • 1 can chickpeas
  • 1 Tbsp apple cider vinegar
  • 1 garlic clove
  • 2 Tbsp olive oil
  • 3 Tbsp water
  • ½ tsp cumin
  • Pinch salt

Combine all ingredients in a food processor. Blend until smooth.

Roasted Red Pepper Hummus:

  • 1 can chickpeas
  • 1 Tbsp apple cider vinegar
  • 1 garlic clove
  • 2 Tbsp olive oil
  • 3 Tbsp water
  • ½ tsp cumin
  • ½ cup roasted red pepper
  • Small handful fresh basil
  • Pinch salt

Combine all ingredients in a food processor. Blend until smooth.

Black Bean Dip:

  • 1 can black beans
  • 1 garlic clove
  • 1 tsp cumin
  • 1 tsp coriander
  • Salt and Pepper
  • Pinch cayenne pepper

Combine all ingredients in a food processor. Blend until smooth.
