Vegan & Gluten Free Banana Chocolate Chip Muffins


here is very little in the world that is better than chocolate. However, BANANAs really do make chocolate that much more delicious. Especially when they are baked into these perfect little goodies. 

  • 5 medium, very ripe bananas

  • 1 Tbsp chia seeds + 1/3 cup almond milk

  • 1 Tbsp coconut oil

  • 1/2 cup maple syrup or honey

  • 1 cup oat flour

  • 3/4 cup rolled oats

  • 1/2 cup almond flour

  • 1 teaspoon baking soda

  • 1 teaspoon sea salt

  • 1/4 tsp cinnamon

  • 1/2 cup chocolate chips

Preheat oven to 350 degrees.

Mash the bananas in a large bowl. Combine with the chia and milk mixture and add the honey or maple syrup. Mix together. Allow to sit for 10 minutes.

Meanwhile in a large bowl, combine the oats, oat flour, almond flour, baking soda, salt and cinnamon.  

Incorporate the banana mixture into the flour mixture. Add chocolate chips and fold to combine. 

Place batter in a greased muffin tin and bake for 22-25 minutes.
