Sundried Tomato and Broccoli Salad

This salad is rich nutritious and totally delicious. Did you know that sun dried tomatoes are actually richer in vitamins than raw tomatoes? Try them layered on top of broccoli and greens for a spectacular salad. 


  • 1/2 cup broccoli, cleaned and chopped

  • 2 Tbsp sundried tomatoes, sliced

  • 2 Tbsp roasted red pepper, sliced

  • 1/4 cup cucumber, chopped

  • 2 cups, mixed greens Dressing

  • 2 Tbsp balsamic vinegar

  • 1 Tbsp maple syrup

  • 1 Tbsp Dijon

  • 1/4 cup olive oil

  • Salt & pepper
