If you aren't familiar with this traditional Korean dish, you should be. Our take is less than authentic but more than satisfying. 

Serves 2 People

  • 2 cups cooked brown rice

  • 5 mushrooms, chopped

  • 1 cup broccoli

  • 1/2 cup carrots, julienned

  • 1/4 cup red onion, thinly sliced

  • 1 red pepper, thinly sliced

  • 2 organic eggs Sauce

  • 1/4 cup apple cider vinegar

  • 1/4 cup tamari (or soy sauce)

  • 1 Tbsp honey or agave

  • 1 Tbsp sriracha

  • 1/2 tsp dry mustard

Place hot rice in a bowl with the vegetables. Meanwhile, poach your organic eggs in boiling water for 3 minutes, drying gently before setting atop the rice and vegetables. Drizzle with your spicy sauce and serve piping hot.
