The Best Granola Ever

No joke. We think this is the best granola ever. Crunchy clusters of sweet oats, nuts and buckwheat with a hint of granola and vanilla. It simply can't be beat. 


1 1/2 cups gluten free rolled oats

1/2 cup unsweetened shredded coconuts

1/4 cup buckwheat grouts

3 Tbsp chia seeds

1/2 cup almonds, chopped

1/2 cup walnuts, chopped

1 Tbsp coconut sugar

3 Tbsp coconut oil

1/3 cup maple syrup

1 tsp vanilla extract


Preheat oven to 325 degrees F.

Combine oats, almonds, walnuts, buckwheat, chia, coconut and coconut sugar in a large bowl. 

In a small saucepan add coconut oil, maple syrup and vanilla. Heat and whisk until combined. Pour this mixture over the oats and nuts mix and stir to coat entirely. 

Place on a large baking sheet that has been covered in parchment. Make sure the mixture is evenly spread in a 1/4-1/2 inch layer. 

Bake for 25-30 minutes without disturbing the contents. 

Once browned, remove the pan from the oven and allow to cool before breaking it apart and store in an airtight container.
